1 Measuring Cup
- 1 tbsp olive oil
- 1/2 cup onions diced
- 1 tbsp garlic minced
- 3 Bay Leaf
- 1/2 cup bell pepper red, yellow, or orange for color
- 1/4 cup japlepo diced
- 1 cup dry black beans
- 2 cups water or broth
Spices
- 1 tbsp Ground Cumin
- 1 tbsp Oregano
- 1/2 tsp Paprika
- 1/2 tsp Salt to taste
Presentation / Serving
- 1 tbsp Lime juice
- 1/2 cup Cilantro chopped
Step 1: Prepare your ingredients. Dice your onion, bell pepper, and jalapeno. Measure out your beans and spices.
Step 2: Set your pressure cooker on saute and add your onion, bell pepper, and jalapeno to the pot. Saute for about 3 minutes, and then add the garlic.
Step 3: Add the Bay leaf and spices
Step 4: Add the Black Beans and water/broth, stir to deglaze the bottom of the pot, and mix the ingredients.
Step 5: Set the Instant Pot to pressure cook = high and set the time for 40 minutes.
Step 6: Let the beans cook and then naturally release the pressure. About 10 minutes after the pressure cooking time is finished.
Step 7: When the pressure has fully released, remove the lid and stir to remix the ingredients. Check the salt to taste.
Step 8: Add the lime juice and cilantro when serving.
